Jorge Ortega was taken to hospital in a critical condition after the attack last Wednesday (December 4) – but died there two days later.
The 61-year-old was working as a customer experience assistance for MTREL, a train operator running Elizabeth line services, at the time of the assault.
Paying tribute to the “dedicated worker” for over 24 years, a one-minute silence was held today (December 11).
Flowers were laid next to a notice board which had a message “in loving memory” of Jorge.
It read: “At 11am today, we will be observing a one-minute silence.
“This is in remembrance of our friend and colleague, Jorge Ortega, who sadly lost his life working on the railway.
“We do this to honour his memory and we invite our customers to join us in pausing for this moment of reflection.”
In a GoFundMe page which has raised over £13,000 for his memorial fund, it was claimed that Jorge was only “a couple of hours away” from returning to his wife at home.
The page stated: “He has lost his life simply for carrying out his job”.
Ayodele Jamgbadi, of Kingston Road in Ilford, has been charged with Grievous Bodily Harm (GBH), affray and possession of a prohibited offensive weapon in a private place in connection with the incident.
The 28-year-old has been remanded and is now due to appear at Inner London Crown Court on January 7 next year.
Rail union RMT has said that Mr Ortega was one of its members, adding that it was “deeply saddened” by his death in a post on social media.
Reacting to the news, London Mayor Sadiq Khan said that there is “no place for such violence anywhere in our city”.
He added: “My thoughts are with the family, friends and colleagues of Jorge Ortega – who went to work on Wednesday to help Londoners and visitors to our capital, but tragically never got to go home.”
