Barbs recently opened their first kitchen in London with the aim of putting the spotlight on Bajan food.
The menu includes Bajan fried chicken or fish burgers, fishcakes, macaroni pie, and souse, a traditional Bajan dish of cold pickled pork or chicken served with sweet potato or breadfruit.
We tried both the fried chicken and fish burgers which were both exceptional.
The fish and chicken were both in a crispy coating, the fish was delicate and flavourful, and each came with a lot of pickles inside which is always a winner for me.
Barbs, founded by Nicc Wright, recently opened their first kitchen in south east London (Image: NQ) But the real star of the show was the Bajan macaroni pie – their take on macaroni and cheese. Baked in a oven, the macaroni on top was incredibly crispy.
Unlike many Caribbean restaurants in the UK, which focus on Jamaican jerk flavours, Barbs offers a fresh take on Caribbean cuisine, focusing not just on spice and heat, but on delicate flavours.
That’s not to say there’s no spice on offer, if you decide to order from Barbs be sure to try a selection of their sauces – our favourites were their hot pepper sauce and the pickles.
