Chef Josh Dallaway and Sommelier Sinead Murdoch are moving into neighbourhood Italian restaurant and wine bar Giacco’s next month.
In a post on Instagram, Giacco’s said they were thrilled the couple would be taking over their kitchen from December 9 until January 31.
They wrote: “Tasca is a love letter to the couple’s travels through Portugal, Spain, and the South of France, inspired by the conviviality and generosity of the Iberian Peninsula’s dining culture.”
And they promised: “A produce led menu inspired by the spirit of traditional tascas that line the streets of Lisbon and Madrid – to create bold, flavourful and big-hearted food.”
Dallaway has worked across London, hosting pop-ups in restaurants from Brunswick House, Bar Bruno, and Half Cut Market.
Tasca’s most recent residency was at Cav in Paradise Row, Bethnal Green – where Time Out and Evening Standard critics praised their food.
They folded up their residency in early September which embraced the relaxed yet social dining cultures across the Iberian Peninsula in family-run restaurants celebrating local produce.
Staples on the menu included a selection of pintxos and petiscos such as Cantabrian Anchovy and Kumquat Gilda and the Jambon Beurre Gilda.
Tasca’s pork and prawn version of the Cachorrinho – similar to a hotdog was also a favourite alongside Cornish shellfish served in a sharp escabeche and Dorset Clams in a Bilbaína sauce of burnt garlic, dried chillies and cider vinegar.
For dessert there was the Chocolate crema with olive oil and sea salt and Bikini sandwich, a version of the Barcelona ham and cheese sandwich smothered in smoked maple syrup and served with creme fraiche.
Alongside Josh’s menu, Sinead has curated a special selection of wines to pair with the dishes, which favour female-led wineries.
In the spirit of collaboration Tasca will host special guests on Sundays throughout their residency. Named Tasca and Friends it will kick off with the head of pastry at Morchella in Rosebery Avenue and the curation of special dishes with Josh on Sunday December 14.
