According to the hoardings outside the site in Haverstock Hill, Von Crumb will open this month as a daytime cafe offering coffee and lunches, before turning into an evening dining spot.
Owners David Ben Meir and Or Yerushalmi then hope to expand the concept to several “express” outlets in food markets across the capital.
They will serve the popular German and Austrian dish based on thin slices of veal or chicken, breaded and fried, and served either as sandwiches or with sides such as potatoes, cabbage or salad.
Ben Meir told hospitality trade website Propel News they would deliver “high-quality, hearty food in a relaxed, accessible environment”.
He said: “Von Crumb transforms the traditional schnitzel into an everyday delight without compromising quality. We will offer a daytime cafe serving coffee, juice and light fare; a lunch spot for quick or leisurely meals; and an evening venue for drinks and dining,” he added.
“Our focused menu will feature hearty schnitzels – plated, in a sandwich, or on a salad – alongside classic dishes, all served in a casual yet stylish, community-focused atmosphere.”
The name might perhaps spring from Lynley Dodd’s 1983 classic children’s book Hairy Maclary, which features an array of dog characters including a Dachshund called Schnitzel Von Krumm.
Von Crumb’s owners have applied to Camden Council for a licence to sell alcohol with lunch and dinner, with the restaurant open 11.30am to 10.30pm Sunday to Thursday, and 11.30am to 11pm Friday and Saturday.
Under submitted plans there would be seating for 24 people inside with space for a further 22 on the outside terrace, which the application says would be “cleared of customers by 10pm on each day.”
They have also applied for an illuminated sign reading Von Crumb Schnitzel Cafe and the final date of the licensing consultation is March 14.
